Instructions

  1. Cook chicken: Heat olive oil in a large pot. Season chicken with salt and pepper. Cook 5–7 minutes per side until done.
  2. Shred chicken: Remove, shred with two forks, and set aside.
  3. Sauté aromatics: In same pot, cook onion until soft. Add garlic for 1 minute.
  4. Add spices: Stir in green chiles, cumin, oregano, cayenne. Cook 1–2 minutes.
  5. Simmer: Return shredded chicken to pot. Add beans and chicken broth. Simmer 20–25 minutes.
  6. Make it creamy: Stir in cream and cheese until melted. Adjust seasoning.
  7. Serve: Garnish with cilantro, lime wedges, and sour cream.
