- Traeger Beef Rub or homemade BBQ rub (salt, black pepper, garlic powder, paprika)
- Optional marinade (Worcestershire sauce, soy sauce, garlic, apple cider vinegar)
- Recommended wood pellets: hickory or pecan
Instructions
- Trim brisket, leaving about ¼ inch of fat for moisture retention.
- Generously apply rub, massaging into meat; refrigerate uncovered for at least 12 hours.
- Optional: marinate 8–12 hours with marinade mix for extra flavor.
- Preheat Traeger grill to 225°F using hickory or pecan pellets.
- Place brisket fat-side up on the grill and smoke at 225°F.
- Monitor internal temperature; wrap in foil or butcher paper (Texas Crutch) when it hits 165°F (about 6-7 hours in).
- Continue smoking until internal temp reaches 200°F.
- Rest the brisket for at least 1 hour before slicing.
- Slice against the grain and serve with your favorite sides.
