Perfect crispy oven roasted potatoes with golden crunchy edges and fluffy centers. This easy oven method creates flavorful potatoes using garlic, parmesan, herbs, and olive oil — the perfect side dish for weeknight dinners or holiday meals.

- 2 lbs potatoes (Yukon Gold, Russet, or baby potatoes)
- 3 tablespoons olive oil
- 4 cloves garlic, minced or 1 teaspoon garlic powder
- 1/4 cup freshly grated Parmesan
- 1 teaspoon dried rosemary
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley for garnish
- Optional: juice and zest of 1/2 lemon
- Optional: 1 tablespoon honey
- Optional: 4 strips cooked bacon, crumbled
Instructions
- Preheat oven to 425°F (220°C).
- Wash the potatoes thoroughly and dry them completely with a kitchen towel.
- Cut the potatoes into evenly sized chunks or wedges.
- In a large bowl, toss the potatoes with olive oil, garlic, parmesan, rosemary, Italian seasoning, salt, and black pepper.
- Spread the potatoes in a single layer on a baking sheet with space between each piece.
- Roast in the oven for 20 minutes.
- Remove the baking sheet and flip the potatoes.
- Return to the oven and roast for another 15–20 minutes until golden and crispy.
- Remove from the oven and garnish with fresh parsley.
- Optional: finish with lemon juice, drizzle honey and bacon, or serve with garlic aioli.
Notes
For extra crispy potatoes, preheat the baking sheet in the oven before adding the potatoes. Make sure potatoes are completely dry before roasting to avoid steaming.
