Ingredients

  • 1 cup (240g) sourdough discard
  • 2 ½ cups (320g) bread flour
  • ½ cup (120ml) warm water
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp instant yeast (optional)

Instructions

  1. In a large bowl, mix sourdough discard, warm water, and olive oil until smooth.
  2. Add bread flour and kosher salt, and mix until a shaggy dough forms.
  3. Optionally sprinkle instant yeast and incorporate well.
  4. Use stretch and fold technique: stretch one side and fold over, rotate and repeat 4–6 times.
  5. Let dough rest 30 minutes and repeat folds if desired.
  6. Cover and let rise for 2–3 hours until doubled.
  7. Transfer to floured surface and divide into two portions.
  8. Shape into balls and gently stretch into 10–12 inch circles.
  9. Preheat oven to 500°F (260°C) with pizza stone inside.
  10. Add toppings and bake 7–10 minutes until crust is golden.

Notes

For best results, preheat your pizza stone and avoid using a rolling pin to preserve air bubbles for a light, airy crust.
