Pizza night is even more exciting with this sourdough discard pizza dough recipe! It’s an easy, flavorful way to reduce food waste while creating a tangy, artisan-style crust perfect for homemade pizzas.

- 1 cup (240g) sourdough discard
- 2 ½ cups (320g) bread flour
- ½ cup (120ml) warm water
- 2 tbsp olive oil
- 1 tsp kosher salt
- ½ tsp instant yeast (optional)
Instructions
- In a large bowl, mix sourdough discard, warm water, and olive oil until smooth.
- Add bread flour and kosher salt, and mix until a shaggy dough forms.
- Optionally sprinkle instant yeast and incorporate well.
- Use stretch and fold technique: stretch one side and fold over, rotate and repeat 4–6 times.
- Let dough rest 30 minutes and repeat folds if desired.
- Cover and let rise for 2–3 hours until doubled.
- Transfer to floured surface and divide into two portions.
- Shape into balls and gently stretch into 10–12 inch circles.
- Preheat oven to 500°F (260°C) with pizza stone inside.
- Add toppings and bake 7–10 minutes until crust is golden.
Notes
For best results, preheat your pizza stone and avoid using a rolling pin to preserve air bubbles for a light, airy crust.
