Ingredients

  • 1 lb 80/20 ground beef
  • Salt
  • Freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 4 small flour tortillas (about 8 inches)
  • 4 slices American cheese or cheddar
  • Thinly sliced white onion
  • Dill pickle slices
  • Shredded iceberg lettuce
  • 2 Roma tomatoes, diced
  • 3 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon sugar

Instructions

  1. Whisk together mayonnaise, ketchup, mustard, vinegar, and sugar in a small bowl to make the special sauce. Season with salt and pepper and refrigerate until ready to use.
  2. Divide the ground beef into 4 loose balls (about 4 ounces each).
  3. Heat a cast iron skillet or flat griddle over high heat until very hot.
  4. Place a flour tortilla flat on the hot skillet.
  5. Put a beef ball in the center of the tortilla and smash it firmly with a heavy metal spatula into a thin patty.
  6. Season immediately with salt, pepper, garlic powder, and onion powder.
  7. Cook for 2 to 3 minutes until the beef develops crispy edges.
  8. Add a slice of cheese on one half of the patty.
  9. Fold the tortilla over the cheese and press gently.
  10. Flip and cook for about 1 more minute to toast the other side.
  11. Open the taco carefully and add shredded lettuce, diced tomatoes, onions, pickles, and the special sauce.
  12. Serve immediately while crispy.

Notes

Use 80/20 ground beef for the best crispy edges. Make sure the pan is very hot before smashing the beef. These tacos are best eaten immediately after cooking to keep the tortilla crispy.
