  • 4 boneless, skinless chicken breasts (about lb)
  • 1 cup long-grain white rice, rinsed
  • 2 ½ cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ cup grated Parmesan cheese (optional, for creaminess)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Lightly grease your slow cooker with olive oil or nonstick spray.
  2. Place chicken breasts at the bottom of the slow cooker.
  3. Add onion, garlic, thyme, rosemary, salt, and pepper on top.
  4. Pour in chicken broth and fresh lemon juice. Sprinkle lemon zest for added flavor.
  5. Cover and cook on Low for 5–6 hours or High for 2½–3 hours, until chicken is tender.
  6. Stir in rice, making sure it’s submerged in the liquid. Continue cooking on High for 45–60 minutes, until rice is cooked.
  7. Fluff rice gently with a fork. Stir in Parmesan if desired for extra creaminess.
  8. Top with fresh parsley before serving.

Notes

Use boneless thighs for extra juiciness, or add carrots, spinach, or peas for a full meal. For stronger citrus notes, include lemon slices with the juice and zest.
