- 2 large crisp apples (Granny Smith or Honeycrisp), cored and chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup toasted walnuts or pecans, roughly chopped
- 1/4 red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
- For the Dressing:
- 3 tbsp extra-virgin olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1/2 tsp honey or maple syrup
- Kosher salt and freshly cracked black pepper, to taste
Instructions
- Make the dressing: In a small bowl or jar, whisk olive oil, vinegar, Dijon, and honey until smooth and glossy. Season with salt and pepper.
- Toast the nuts: Add walnuts or pecans to a dry skillet over medium heat. Shake often until fragrant and a shade darker, 3–5 minutes. Transfer to a plate to cool.
- Prep produce: Chop apples into bite-size pieces (no need to peel), thinly slice red onion, and chop parsley.
- Toss: In a large bowl, combine apples, onion, most of the feta, and most of the parsley. Drizzle over about half the dressing and toss gently. Add more dressing to lightly coat.
- Finish: Top with toasted nuts and the remaining feta and parsley. Taste and adjust seasoning. Serve right away.
Notes
Best served fresh. To prep ahead, make the dressing and toast nuts in advance. Assemble just before serving to keep the apples crisp.
