Description

These Samoa truffles pack everything you love about the classic cookie into a rich, no-bake dessert. With toasted coconut, caramel, and chocolate in every bite, they’re perfect for holidays, cookie swaps, or anytime you want an easy sweet treat.


Ingredients

  • 2 cups sweetened shredded coconut
  • 3 oz cream cheese, softened
  • 1/4 cup caramel sauce, plus more for drizzling
  • 1/2 tsp vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil or butter
  • Pinch of salt

Instructions

  1. Toast the coconut in a dry skillet over medium heat, stirring often, until golden brown. Let it cool completely.
  2. In a mixing bowl, combine cream cheese, caramel sauce, vanilla extract, and salt until smooth.
  3. Fold in the toasted coconut until evenly combined.
  4. Scoop the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Freeze for 20 minutes.
  5. Melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
  6. Dip each truffle into the melted chocolate and return to the baking sheet.
  7. Drizzle with extra caramel and chill until the chocolate sets.

Notes

Use dark chocolate for a less sweet option. Swap cream cheese with mascarpone for a richer filling. Chill the mixture well before dipping.
