- 2 cups sweetened shredded coconut
- 3 oz cream cheese, softened
- 1/4 cup caramel sauce, plus more for drizzling
- 1/2 tsp vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil or butter
- Pinch of salt
Instructions
- Toast the coconut in a dry skillet over medium heat, stirring often, until golden brown. Let it cool completely.
- In a mixing bowl, combine cream cheese, caramel sauce, vanilla extract, and salt until smooth.
- Fold in the toasted coconut until evenly combined.
- Scoop the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Freeze for 20 minutes.
- Melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
- Dip each truffle into the melted chocolate and return to the baking sheet.
- Drizzle with extra caramel and chill until the chocolate sets.
Notes
Use dark chocolate for a less sweet option. Swap cream cheese with mascarpone for a richer filling. Chill the mixture well before dipping.
