For the Cake Layers:
- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 ½ cups buttermilk (room temperature)
- ½ cup vegetable oil
- 2 large eggs (room temperature)
- 1 tablespoon white vinegar
- 2 teaspoons vanilla extract
- Purple gel food coloring (adjust to your desired shade)
For the Cream Cheese Frosting:
- 1 cup unsalted butter (softened)
- 16 ounces cream cheese (softened)
- 4 cups powdered sugar (sifted)
- 2 teaspoons vanilla extract
- Optional: ½ cup melted white chocolate
Instructions
Step 1: Prepare the Cake Pans and Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Grease two or three 9-inch round cake pans and line them with parchment paper.
Step 2: Mix the Dry Ingredients
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
Step 3: Combine the Wet Ingredients
- In another bowl, whisk the buttermilk, vegetable oil, eggs, vinegar, and vanilla extract until smooth.
Step 4: Create the Batter
- Gradually mix the wet ingredients into the dry ingredients, stirring gently to avoid overmixing.
- Add purple gel food coloring to the batter, starting with ½ teaspoon and adjusting until you achieve the desired shade.
Step 5: Bake the Cake
- Divide the batter evenly between the prepared cake pans.
- Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 6: Make the Cream Cheese Frosting
- In a mixing bowl, beat the butter and cream cheese together until light and fluffy (about 3 minutes).
- Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
- Stir in the vanilla extract, and if desired, mix in melted white chocolate for extra richness.
Step 7: Assemble the Cake
- Place one cake layer on a serving plate. Spread a generous amount of frosting on top.
- Add the second layer and repeat. For a three-layer cake, add the final layer and frost the top and sides.
- Decorate with edible flowers, fresh berries, or sprinkles for a stunning finish.
Notes
- Storage: Store leftover cake in an airtight container in the fridge for up to 5 days. You can also freeze the cake layers (unfrosted) for up to 3 months.
- Natural Coloring: For a more natural approach, use ube powder, beet juice, or purple sweet potato puree instead of gel food coloring.
- Decoration Ideas: Try ombre frosting, edible glitter, or fresh fruit to match your celebration theme.
