Tart Crust:
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter (cold, cubed)
- 2 tbsp sugar
- 1 egg yolk
- 3–4 tbsp ice water
Plum Milk Filling:
- 4–5 fresh plums (ripe, pitted, and pureed)
- 1 cup whole milk (or coconut milk for dairy-free)
- ½ cup sweetened condensed milk
- 2 tbsp cornstarch (dissolved in 2 tbsp water)
- 2 eggs (beaten)
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- 2 tbsp honey or sugar (adjust to taste)
Instructions
1. Prepare the Tart Crust
- In a mixing bowl, combine flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
- Add egg yolk and ice water gradually, mixing until a dough forms.
- Wrap and chill for 30 minutes. Then, roll out and press into a tart pan.
- Blind bake at 375°F (190°C) for 10 minutes. Let cool.
2. Make the Plum Milk Filling
- Puree fresh plums until smooth.
- In a saucepan, cook plum puree with sugar and cinnamon over medium heat for 5 minutes.
- Stir in milk and condensed milk.
- Gradually whisk in the cornstarch mixture and cook until slightly thickened.
- Let cool slightly before whisking in eggs and vanilla extract.
3. Assemble & Bake
- Pour the filling into the pre-baked tart shell.
- Bake at 350°F (175°C) for 25-30 minutes, until the center is set.
- Let cool before slicing.
Notes
- For a gluten-free crust, use almond or oat flour.
- Swap whole milk for coconut or almond milk for a dairy-free option.
- Add ginger and nutmeg for a spiced version.
