Tart Crust:

  • 1 egg yolk
  • 34 tbsp ice water
Plum Milk Filling:
  • 45 fresh plums (ripe, pitted, and pureed)
  • 1 cup whole milk (or coconut milk for dairy-free)
  • ½ cup sweetened condensed milk
  • 2 tbsp cornstarch (dissolved in 2 tbsp water)
  • 2 eggs (beaten)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • 2 tbsp honey or sugar (adjust to taste)

Instructions

1. Prepare the Tart Crust

  • In a mixing bowl, combine flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
  • Add egg yolk and ice water gradually, mixing until a dough forms.
  • Wrap and chill for 30 minutes. Then, roll out and press into a tart pan.
  • Blind bake at 375°F (190°C) for 10 minutes. Let cool.

2. Make the Plum Milk Filling

  • Puree fresh plums until smooth.
  • In a saucepan, cook plum puree with sugar and cinnamon over medium heat for 5 minutes.
  • Stir in milk and condensed milk.
  • Gradually whisk in the cornstarch mixture and cook until slightly thickened.
  • Let cool slightly before whisking in eggs and vanilla extract.

3. Assemble & Bake

  • Pour the filling into the pre-baked tart shell.
  • Bake at 350°F (175°C) for 25-30 minutes, until the center is set.
