This rich and savory mushroom gravy delivers deep, steakhouse-style flavor using a simple browning trick—no meat drippings needed. Perfect for mashed potatoes, turkey, pork chops, and weeknight dinners.

- 8 oz mushrooms, sliced (cremini or white button)
- 3 tbsp unsalted butter
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 3 tbsp all-purpose flour
- 2 cups chicken or vegetable broth
- 1 tsp Worcestershire sauce
- 1/2 tsp kosher salt (more to taste)
- 1/2 tsp black pepper
- 1 tsp fresh thyme or 1/4 tsp dried thyme
Instructions
- Melt butter in a large skillet over medium heat. Add mushrooms and cook 7–9 minutes until deeply browned and slightly stuck to the pan.
- Add 1–2 tbsp of broth to deglaze and loosen browned bits.
- Stir in onion and cook 3 minutes. Add garlic and cook 30 seconds.
- Sprinkle flour over vegetables. Stir 1 minute to remove raw taste.
- Slowly whisk in remaining broth to avoid lumps.
- Bring to a gentle simmer and cook 5–7 minutes until thickened.
- Stir in Worcestershire sauce, thyme, salt, and pepper. Adjust seasoning as needed. Serve warm.
Notes
For the richest flavor, brown the mushrooms until they stick slightly, then deglaze with broth to lift the flavor-packed bits. For extra depth, use beef broth or add a splash of cream at the end.
