Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. Whisk together flour, baking powder, salt, and sugar in a large bowl.
  3. In another bowl, whisk eggs, milk, butter, and vanilla until smooth.
  4. Gently fold wet mixture into dry ingredients. Do not overmix—batter should be lumpy.
  5. Fold in blueberries, chocolate chips, or other add-ins.
  6. Divide batter into muffin cups. Bake 18–20 minutes or until golden and a toothpick comes out clean.
  7. Let muffins cool slightly before serving warm or at room temperature.

Notes

Do not overmix the batter—this is the number one rule for soft muffins. Fill muffin cups about 3/4 full to prevent overflowing. Sprinkle sugar on top before baking for a crunchy lid.
