Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
- Whisk together flour, baking powder, salt, and sugar in a large bowl.
- In another bowl, whisk eggs, milk, butter, and vanilla until smooth.
- Gently fold wet mixture into dry ingredients. Do not overmix—batter should be lumpy.
- Fold in blueberries, chocolate chips, or other add-ins.
- Divide batter into muffin cups. Bake 18–20 minutes or until golden and a toothpick comes out clean.
- Let muffins cool slightly before serving warm or at room temperature.
Notes
Do not overmix the batter—this is the number one rule for soft muffins. Fill muffin cups about 3/4 full to prevent overflowing. Sprinkle sugar on top before baking for a crunchy lid.
