- 1 ½ cups granulated sugar
- 4 large eggs, room temperature
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 2–3 tbsp high-quality matcha powder (culinary grade)
- ½ tsp salt
- Optional: ½ cup white chocolate chips or chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Melt butter and chocolate together in a double boiler or microwave in 30-second bursts. Let cool slightly.
- Whisk in sugar, then add eggs one at a time, whisking vigorously until thick and shiny. Stir in vanilla.
- In a separate bowl, sift flour, matcha, and salt. Gently fold into the wet mixture—don’t overmix.
- Fold in white chocolate chips or nuts if using. Spread batter evenly into prepared pan.
- Bake 25–30 minutes until top is crackly and a toothpick comes out with moist crumbs. Cool completely before slicing.
