  • 3 cups cooked chicken, shredded
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Add shredded chicken, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir to combine.
  5. Pour in chicken broth and bring to a gentle boil.
  6. Reduce heat, add heavy cream and Parmesan cheese. Stir well.
  7. Simmer for 10–15 minutes until flavors meld together.
  8. Stir in spinach and cook until wilted.
