- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3 cups cooked chicken, shredded
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add shredded chicken, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir to combine.
- Pour in chicken broth and bring to a gentle boil.
- Reduce heat, add heavy cream and Parmesan cheese. Stir well.
- Simmer for 10–15 minutes until flavors meld together.
- Stir in spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve hot with crusty bread or over rice if desired.

You can use rotisserie chicken for quick prep. Adjust spice level by reducing red pepper flakes.
