Instructions
- Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream softened butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in lemon zest and juice.
- Alternate adding dry ingredients and buttermilk, mixing just until combined.
- Toss blueberries in a bit of flour and gently fold into batter.
- Fill cupcake liners ⅔ full and bake for 15–20 minutes or until a toothpick comes out clean.
- Cool in tin for 5 minutes, then transfer to wire rack to cool completely.
- For frosting, beat cream cheese and butter until smooth.
- Gradually add powdered sugar, lemon juice, and lemon zest, whipping until fluffy.
- Pipe or spread frosting on cooled cupcakes and garnish with lemon zest or fresh blueberries.
Notes
Use room temperature ingredients and don’t overmix the batter for the fluffiest texture. Tossing blueberries in flour helps them stay evenly distributed while baking.
