This leftover ham potato casserole is creamy, cheesy, and perfect for turning holiday leftovers into a cozy, family-style meal. Great for busy nights or casual gatherings.

- 3 cups cooked potatoes, diced or sliced
- 2 cups leftover ham, chopped
- 1 small onion, finely diced
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup whole milk
- 2 tbsp unsalted butter
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Salt to taste
Instructions
- Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, melt the butter and sauté the diced onion until soft and translucent.
- In a large bowl, combine cream of mushroom soup, milk, black pepper, garlic powder, and salt.
- Add cooked potatoes, chopped ham, sautéed onions, and 1 1/2 cups of the shredded cheese. Stir gently.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Sprinkle the remaining cheese on top and bake uncovered for 35–40 minutes, until bubbly and lightly golden.
- Let rest for 5 minutes before serving.
Notes
Add peas or corn for extra texture. Try Monterey Jack cheese or top with buttered breadcrumbs for variation. You can also prep ahead and refrigerate until ready to bake.
