- 2 1/4 cups all-purpose flour
- 1/2 cup warm milk
- 1/3 cup warm water
- 2 tbsp olive oil
- 1 tsp sugar
- 1 tsp instant yeast
- 1 tsp salt
- 1 1/2 cups shredded mozzarella
- 1 cup crumbled feta
- 1/2 cup ricotta (optional)
- 1 tbsp butter
- 1 egg yolk
Instructions
- Mix warm water, warm milk, yeast, and sugar. Rest 10 minutes until foamy.
- Add flour, salt, and olive oil. Knead 8–10 minutes until smooth.
- Let rise 1 hour in a warm place.
- Shape dough into an oval, roll edges inward, and form the classic “boat” shape.
- Mix mozzarella, feta, and ricotta. Fill the center.
- Bake at 480°F (250°C) for 12–15 minutes until golden.
- Add butter + egg yolk, bake 1–2 more minutes.
- Serve hot for the perfect cheese pull.
Notes
Use full-fat cheese for the best melt.
Bake on a pizza stone for extra crisp edges.
Serve immediately for the authentic Khachapuri texture.
