Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 ½ cups pumpkin purée
  • ½ cup vegetable oil
  • ¼ cup orange juice or water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, ginger, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, eggs, pumpkin purée, oil, orange juice, and vanilla until smooth.
  4. Pour the wet ingredients into the dry and stir just until combined.
  5. Transfer batter to prepared loaf pan and smooth the top.
  6. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in pan for 10 minutes, then remove to a wire rack to cool completely.

Notes

For extra flavor, add ½ cup of chopped nuts or chocolate chips to the batter.
