Description
A creepy-cute, five-minute party trick that looks pro but takes almost no effort. These Halloween Caprese Eyeball Skewers are festive, fresh, and frightfully easy to assemble.
Ingredients
Scale
- 1 package ciliegine (small mozzarella balls), drained
- 1 pint cherry or grape tomatoes
- 1 bunch fresh basil
- 1 jar large pitted black olives
- Balsamic glaze, for drizzling
- Extra-virgin olive oil, for drizzling
- Sea salt and freshly ground black pepper, to taste
- Wooden skewers or cocktail picks
Instructions
- Pat mozzarella and tomatoes completely dry with paper towels.
- Slice black olives into thick rings to make pupils.
- Thread one tomato, one basil leaf, and one mozzarella ball onto each skewer or pick.
- Gently press an olive ring onto the center of the mozzarella to form the pupil.
- Arrange on a platter.
- Drizzle with balsamic glaze and olive oil just before serving.
- Season with salt and pepper to taste.
Notes
Use large pitted olives for dramatic effect. For added adhesion, a dab of cream cheese can help the olive ring stick. Want to mix it up? Swap tomatoes for roasted beet cubes or drizzle with pesto for spooky variations.
