This classic Gruyere cheese fondue is rich, smooth, and made for sharing. Whether you’re hosting a cozy winter night or a festive New Year’s Eve party, it delivers deep, nutty flavor with minimal effort.

- 1 garlic clove, halved
- 1 cup dry white wine
- 1 tsp lemon juice
- 12 oz Gruyere cheese, freshly grated
- 1 tbsp cornstarch
- 1/4 tsp ground nutmeg
- Freshly ground black pepper, to taste
Instructions
- Rub the inside of a medium saucepan with the cut sides of the garlic clove, then discard the garlic.
- Add the white wine and lemon juice to the pan and heat over medium until just beginning to simmer.
- Toss the grated Gruyere with the cornstarch until evenly coated.
- Reduce heat to low and add the cheese gradually, stirring constantly in a figure-eight motion until fully melted and smooth.
- Stir in nutmeg and black pepper. Keep warm over very low heat, stirring occasionally.
Notes
Use freshly grated cheese for the smoothest texture. Swap half the Gruyere with Emmental for a more traditional Swiss blend. Add a splash of kirsch for extra depth if desired.
