Description

This classic Gruyere cheese fondue is rich, smooth, and made for sharing. Whether you’re hosting a cozy winter night or a festive New Year’s Eve party, it delivers deep, nutty flavor with minimal effort.

Ingredients

Scale
  • 1 garlic clove, halved
  • 1 cup dry white wine
  • 1 tsp lemon juice
  • 12 oz Gruyere cheese, freshly grated
  • 1 tbsp cornstarch
  • 1/4 tsp ground nutmeg
  • Freshly ground black pepper, to taste

Instructions

  1. Rub the inside of a medium saucepan with the cut sides of the garlic clove, then discard the garlic.
  2. Add the white wine and lemon juice to the pan and heat over medium until just beginning to simmer.
  3. Toss the grated Gruyere with the cornstarch until evenly coated.
  4. Reduce heat to low and add the cheese gradually, stirring constantly in a figure-eight motion until fully melted and smooth.
  5. Stir in nutmeg and black pepper. Keep warm over very low heat, stirring occasionally.

Notes

Use freshly grated cheese for the smoothest texture. Swap half the Gruyere with Emmental for a more traditional Swiss blend. Add a splash of kirsch for extra depth if desired.
