Description

- 3/4 cup packed brown sugar
- 1 large egg
- 1/2 cup molasses
- 1 tsp vanilla extract
Instructions
- In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a large bowl, beat the butter and brown sugar until light and fluffy, about 2 minutes.
- Mix in the egg, molasses, and vanilla until smooth.
- Gradually add the dry ingredients and mix just until combined.
- Divide the dough in half, flatten into disks, wrap, and chill for at least 1 hour.
- Preheat the oven to 350°F. Line baking sheets with parchment paper.
- Roll dough to 1/4-inch thickness, cut into shapes, and place 1 inch apart.
- Bake for 8 to 10 minutes, until edges are set but centers remain soft.
- Cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
For softer cookies, bake closer to 8 minutes. Add a pinch of black pepper for extra warmth. Decorate with icing inspired by red velvet crinkle cookies for a festive look.
