These Gingerbread Brownies are fudgy, chocolatey, and warmly spiced with ginger, cinnamon, nutmeg, and molasses. They’re the perfect Christmas brownie for holiday parties, cookie boxes, and cozy winter baking.

- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1/3 cup molasses
- 1 tbsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 2 tsp ground ginger
- 1 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp baking powder
- 1/2 tsp salt
- Optional: 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Whisk the melted butter, granulated sugar, and brown sugar until smooth.
- Add the eggs, molasses, and vanilla extract. Mix well.
- In a separate bowl, whisk together the flour, cocoa powder, ginger, cinnamon, nutmeg, cloves, baking powder, and salt.
- Add the dry mixture to the wet mixture and stir until just combined. Fold in chocolate chips if using.
- Spread the batter into the prepared pan and smooth the top.
- Bake for 28–33 minutes, or until the center is set but still soft.
- Cool completely before slicing for perfect brownie squares.
Notes
For extra fudgy brownies: remove them when the center is slightly soft.
Add more ginger if you want a stronger gingerbread flavor.
Dust with powdered sugar for a festive Christmas look.
Brownies freeze well for up to 3 months.
