Description

Ingredients

  • 1 1/2 pounds cremini or baby bella mushrooms, cleaned and trimmed
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, finely minced
  • 1 teaspoon kosher salt, more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves, chopped (or 1/2 teaspoon dried)
  • 1 teaspoon fresh rosemary, finely chopped
  • 2 tablespoons fresh parsley, chopped, plus more for serving
  • 1 tablespoon fresh lemon juice (about 1/2 lemon)
  • Optional: 2 tablespoons dry white wine or chicken broth
  • Optional: 1 to 2 tablespoons grated Parmesan cheese
  • Optional: Pinch of red pepper flakes

Instructions

  1. Wipe mushrooms clean and trim stems. Leave small ones whole, cut larger ones in half.
  2. In a large skillet, melt 2 tablespoons butter with olive oil over medium-high heat.
  3. Add mushrooms in a single layer and cook undisturbed for 4 to 5 minutes until browned on one side.
  4. Season with salt and pepper. Stir and cook another 5 to 7 minutes until browned all over.
  5. Optional: Add wine or broth and scrape pan. Simmer 1 to 2 minutes.
  6. Push mushrooms to edges of pan. Add remaining 1 tablespoon butter, then garlic, thyme, and rosemary. Cook 30 to 60 seconds.
  7. Stir mushrooms into garlic herb butter.
  8. Turn off heat and add lemon juice and parsley. Taste and adjust seasoning.
  9. Transfer to a serving dish and garnish with extra parsley.

Notes

For best browning, dry mushrooms well and avoid crowding the pan. You can prep ahead and reheat gently before serving. Optional add-ins like white wine or Parmesan enhance flavor.
