Ingredients
- Egg Roll Wrappers – 12 sheets
- Goat Cheese – 6 oz (softened)
- Fresh Jalapeños – 2, finely diced (adjust to taste)
- Cream Cheese (optional) – 2 oz
- Shredded Cheddar Cheese (optional) – 1/2 cup
- Garlic Powder – 1/2 tsp
- Smoked Paprika (optional) – 1/4 tsp
- Vegetable Oil – For frying
Instructions
- In a bowl, mix goat cheese, diced jalapeños, cream cheese (if using), cheddar, garlic powder, and paprika until smooth.
- Lay an egg roll wrapper on a clean surface, with a corner pointing toward you. Place 1 tablespoon of filling in the center.
- Fold the bottom corner over the filling, then fold in the sides. Roll tightly into a cylinder and seal the edge with water. Repeat for all wrappers.
- Heat oil to 350°F (175°C) in a skillet. Fry the rolls in batches for 2–3 minutes until golden brown, turning occasionally.
- Remove and drain on paper towels. Serve hot with your favorite dipping sauces.
Notes
- Adjust spice level by removing seeds from the jalapeños for a milder flavor.
- For a healthier version, bake at 400°F (200°C) for 15–20 minutes or air fry at 375°F (190°C) for 8–10 minutes.
- Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
