Ingredients

  • 67 large fresh peaches, peeled and sliced (about 6 cups)
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 cup whole milk
  • 1/2 cup (1 stick) unsalted butter

Instructions

  1. Preheat oven to 350°F. Place butter in a 9×13-inch baking dish and set it in the oven to melt while preheating. Watch carefully to avoid burning.
  2. In a large bowl, combine peaches, 1/2 cup sugar, lemon juice, vanilla, cornstarch, and cinnamon. Let sit to get juicy.
  3. In another bowl, whisk flour, 1 cup sugar, baking powder, and salt. Slowly whisk in milk until smooth.
  4. Carefully remove the hot baking dish. Pour the batter evenly over melted butter. Do not stir.
  5. Spoon the peaches and all juices evenly over the batter. Again, do not stir.
  6. Bake for 45–55 minutes until golden-brown and bubbling. Rotate halfway through if needed.
  7. Cool at least 15 minutes before serving.

Notes

Use canned or frozen peaches if needed—drain well and add extra cornstarch if very juicy. A splash of bourbon adds depth. Serve warm with ice cream or whipped cream. Don’t stir batter and peaches together—this keeps the top crisp and golden.
