- 6–7 large fresh peaches, peeled and sliced (about 6 cups)
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 2 tbsp cornstarch
- 1/2 tsp ground cinnamon
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp kosher salt
- 1 cup whole milk
- 1/2 cup (1 stick) unsalted butter
Instructions
- Preheat oven to 350°F. Place butter in a 9×13-inch baking dish and set it in the oven to melt while preheating. Watch carefully to avoid burning.
- In a large bowl, combine peaches, 1/2 cup sugar, lemon juice, vanilla, cornstarch, and cinnamon. Let sit to get juicy.
- In another bowl, whisk flour, 1 cup sugar, baking powder, and salt. Slowly whisk in milk until smooth.
- Carefully remove the hot baking dish. Pour the batter evenly over melted butter. Do not stir.
- Spoon the peaches and all juices evenly over the batter. Again, do not stir.
- Bake for 45–55 minutes until golden-brown and bubbling. Rotate halfway through if needed.
- Cool at least 15 minutes before serving.
Notes
Use canned or frozen peaches if needed—drain well and add extra cornstarch if very juicy. A splash of bourbon adds depth. Serve warm with ice cream or whipped cream. Don’t stir batter and peaches together—this keeps the top crisp and golden.
