- 1 ½ lb ground beef (80/20 for best flavor)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 (15 oz) cans chili beans, undrained
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can diced tomatoes
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp dried oregano
- 1 tsp salt, or to taste
- ½ tsp black pepper
- ½ cup beef broth or water
Instructions
- In a large skillet over medium heat, brown the ground beef with the diced onion until fully cooked. Drain excess grease.
- Add the minced garlic to the skillet and cook for 30 seconds, just until fragrant.
- Transfer the beef mixture to a 6-quart crockpot.
- Add chili beans, kidney beans, crushed tomatoes, diced tomatoes, and beef broth.
- Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper.
- Stir everything well, cover, and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- Taste and adjust seasoning before serving.
Notes
For a thicker chili, remove the lid during the last 30 minutes of cooking. Add cayenne pepper or jalapeños for spice. Swap the ground beef for turkey or chicken, or go vegetarian with lentils and extra beans. Leftovers taste even better the next day and freeze well for up to 3 months.
