- 2 large eggs
- 2 tortillas (flour or corn)
- ½ cup shredded cheese (cheddar, Colby Jack, or mozzarella)
- 2 strips cooked bacon (optional – or substitute with sausage/turkey bacon)
- ¼ cup diced bell peppers
- ¼ cup spinach (optional)
- 1 tsp butter or oil
Instructions
- Crack the eggs into a mixing bowl, season with salt and pepper, and whisk. Optionally add a splash of milk.
- Heat a non-stick skillet over medium heat, add butter or oil, pour in the eggs, and scramble until softly set. Remove from heat.
- Lay one tortilla flat, sprinkle half the cheese, add scrambled eggs and desired fillings, then top with remaining cheese and the second tortilla.
- Heat skillet again with a bit more butter or oil. Cook the quesadilla 2–3 minutes per side until golden and crispy.
- Remove from skillet, cool slightly, slice into triangles, and serve with salsa, guacamole, or sour cream.
Notes
Don’t overload the quesadilla for easier flipping. Prepping ingredients in advance makes this a fast, go-to morning meal.
