Ingredients

  • 2 large eggs
  • 2 tortillas (flour or corn)
  • ½ cup shredded cheese (cheddar, Colby Jack, or mozzarella)
  • 2 strips cooked bacon (optional – or substitute with sausage/turkey bacon)
  • ¼ cup diced bell peppers
  • ¼ cup spinach (optional)
  • 1 tsp butter or oil

Instructions

  1. Crack the eggs into a mixing bowl, season with salt and pepper, and whisk. Optionally add a splash of milk.
  2. Heat a non-stick skillet over medium heat, add butter or oil, pour in the eggs, and scramble until softly set. Remove from heat.
  3. Lay one tortilla flat, sprinkle half the cheese, add scrambled eggs and desired fillings, then top with remaining cheese and the second tortilla.
  4. Heat skillet again with a bit more butter or oil. Cook the quesadilla 2–3 minutes per side until golden and crispy.
  5. Remove from skillet, cool slightly, slice into triangles, and serve with salsa, guacamole, or sour cream.

Notes

Don’t overload the quesadilla for easier flipping. Prepping ingredients in advance makes this a fast, go-to morning meal.
