Description
These crispy air fryer breakfast potatoes are golden on the outside, fluffy on the inside, and ready in just 15 minutes! A healthier, quicker alternative to stovetop home fries, they’re the perfect side for eggs, bacon, or avocado toast.

- 4 medium Yukon Gold or Russet potatoes, diced
- 1–2 tbsp olive oil or avocado oil
- 1 tsp paprika (smoked or sweet)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp freshly ground black pepper
- Optional: 1/2 cup diced bell peppers
- Optional: 1/2 cup diced onions
- Optional: Fresh herbs (parsley, thyme, or chives) for garnish
Instructions
- Wash and dice potatoes into 1/2–1 inch cubes. Soak in cold water for 20–30 minutes to remove excess starch. Drain and pat completely dry.
- Toss dried potatoes with oil, paprika, garlic powder, onion powder, salt, and pepper until evenly coated. Add diced bell peppers and onions if using.
- Preheat air fryer to 400°F (200°C). Place potatoes in a single layer in the basket.
- Cook for 15–18 minutes, shaking or stirring halfway through, until golden brown and crispy.
- Remove and garnish with fresh herbs before serving.
Notes
For best results, don’t overcrowd the basket—cook in batches if necessary. To reheat leftovers, pop them back in the air fryer at 375°F for 3–5 minutes to restore crispiness.
