Description

Classic Lentil Soup is hearty, healthy, and full of flavor. Packed with protein, fiber, and wholesome veggies, this vegan and gluten-free soup is perfect for chilly days or meal prepping all week long. Easy to make, budget-friendly, and endlessly customizable!

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 1 tablespoon tomato paste
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 2 bay leaves
  • Black pepper, to taste
  • 2 cups dry green lentils, rinsed
  • 1 (14.5 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 34 cups water
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion for 2–3 minutes.
  2. Add carrots and celery. Cook for 1 minute.
  3. Mix in tomato paste and cook for 2–3 minutes, stirring occasionally.
  4. Add garlic, Italian seasoning, paprika, cumin, bay leaves, and black pepper. Sauté for 1 minute to toast spices.
  5. Add lentils, crushed tomatoes, vegetable broth, and 3 cups of water. Bring to a boil.
  6. Reduce heat to medium and simmer for 20–30 minutes until lentils are tender. Stir occasionally. Add more water if needed.
  7. Remove bay leaves. Stir in lemon juice. Taste and adjust seasoning if needed.
  8. Serve warm, topped with chopped parsley. Store leftovers in fridge for 5 days or freeze up to 2 months.

Notes

Add extra vegetables like spinach or kale for more nutrition. Use canned lentils for faster cooking—just stir them in during the last 10 minutes. This soup is great for meal prep and freezes beautifully!
