Description

This chocolate covered almonds recipe is a simple, healthy, and delicious snack that combines the crunch of roasted almonds with a rich chocolate coating. Perfect for gifting, meal prep, or satisfying sweet cravings, these homemade chocolate almonds are easy to make with just two ingredients and can be customized for keto, vegan, or sugar-free diets.

Ingredients

Scale
  • 1 ½ cups (200g) almonds (raw or roasted)
  • 1 cup (175g) dark chocolate (70% cocoa or higher, chopped or in chips)
  • 1 teaspoon coconut oil (optional, for a smoother coating)
  • 1/2 teaspoon sea salt (optional, for sweet-salty flavor)
  • ½ teaspoon cinnamon or cayenne (optional, for added spice)

Instructions

  • Roast the Almonds (Optional but Recommended)
    • Preheat oven to 350°F (175°C).
    • Spread almonds on a baking sheet and roast for 8-10 minutes, stirring halfway.
    • Let them cool completely before coating.
  • Melt the Chocolate
    • Double Boiler Method: Place chopped chocolate in a heatproof bowl over simmering water, stirring until melted.
    • Microwave Method: Heat chocolate in 30-second intervals, stirring in between, until smooth.
    • Stir in coconut oil if using, for a glossy coating.
  • Coat the Almonds
    • Drop the roasted almonds into the melted chocolate, stirring until fully coated.
    • Use a fork or slotted spoon to lift almonds out, letting excess chocolate drip off.
  • Let the Chocolate Set
    • Place coated almonds on parchment paper, making sure they don’t stick together.
    • Sprinkle with sea salt, cinnamon, or cayenne, if desired.
    • Let them set at room temperature for 1-2 hours or chill in the fridge for 30 minutes.

Notes

  • For a thicker chocolate coating, let the first layer set, then dip the almonds a second time.
  • To prevent chocolate bloom (white streaks), store in a cool, dry place.
  • Try different coatings! Roll in cocoa powder, shredded coconut, or crushed nuts for extra texture.
  • For a keto-friendly version, use sugar-free dark chocolate.
