Instructions

  1. Slice chicken breasts into thin cutlets and pound to 1/4-inch thickness.
  2. Season both sides with salt and pepper, then dredge lightly in flour, shaking off excess.
  3. Heat olive oil and butter in a skillet over medium heat.
  4. Cook chicken cutlets for 3–4 minutes per side until golden brown. Remove and set aside.
  5. In the same pan, add garlic and shallots. Sauté until aromatic.

  7. Add lemon juice, lemon zest, and capers. Simmer to reduce slightly.
