- 2 large eggs
- 1 avocado, sliced
- ½ cup shredded cheddar or Monterey Jack cheese
- 2 tablespoons salsa (homemade or store-bought)
- 1 large flour tortilla (or whole wheat for a healthier option)
- 1 tablespoon olive oil or butter
- Salt and pepper to taste
- Optional: black beans, jalapeños, spinach, or hot sauce for extra flavor
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken breast with salt and pepper and cook for 5–7 minutes per side until fully cooked. Slice or shred once cooled. (Use leftover chicken for convenience.)
- In a bowl, whisk the eggs with salt and pepper. In a clean pan, cook over medium-low heat, stirring gently until soft and fluffy.
- Warm the tortilla in a skillet. Add scrambled eggs, sliced chicken, avocado, shredded cheese, and salsa to the center.
- Fold in the sides of the tortilla and roll tightly to form a burrito.
- Toast the wrapped burrito in a dry skillet for 1–2 minutes on each side until golden and crispy.
- Slice in half and serve immediately with extra salsa or avocado lime ranch dressing.
Notes
