Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Whisk melted butter, sugars, and vanilla. Beat in eggs one at a time. Stir in flour, cocoa powder, and salt until smooth. Spread evenly in the pan and bake for 20 minutes. Let cool slightly.
- Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in sour cream, vanilla, and heavy cream.
- Pour cheesecake batter over brownie layer. Bake 50–60 minutes, or until center is just set. Cool in oven with the door cracked for 1 hour.
- Refrigerate at least 4 hours or overnight for best texture.
- Heat heavy cream until steaming, pour over chocolate chips, and stir until smooth. Spread on top of chilled cheesecake.
- Top with sprinkles, chocolate curls, or whipped cream before serving.
