- 1 ½ cups graham cracker crumbs

- 6 tbsp unsalted butter, melted

- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 2 tsp vanilla extract
- 1 tbsp all-purpose flour (optional)

- Rainbow sprinkles
- Fresh fruit or chocolate sauce (optional)
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake for 8–10 minutes. Let cool completely.
- In a large bowl, beat cream cheese until smooth. Add sugar and beat until fluffy. Mix in eggs one at a time. Add sour cream, vanilla, and flour (if using), mixing until combined.
- Pour filling over crust. Bake for 50–60 minutes, or until edges are set and center slightly jiggles.
- Turn off oven, crack door open, and let cheesecake rest for 1 hour. Then chill in refrigerator for at least 4 hours or overnight.
- Before serving, top with whipped cream and sprinkles. Add fruit or chocolate sauce if desired.
Notes
For best results, use room-temperature ingredients. Avoid overmixing to prevent cracks. You can also add chocolate ganache, caramel drizzle, or fresh berries for a flavor twist. Make ahead and chill overnight for the creamiest texture.
