Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake for 8–10 minutes. Let cool completely.
  3. In a large bowl, beat cream cheese until smooth. Add sugar and beat until fluffy. Mix in eggs one at a time. Add sour cream, vanilla, and flour (if using), mixing until combined.
  4. Pour filling over crust. Bake for 50–60 minutes, or until edges are set and center slightly jiggles.
  5. Turn off oven, crack door open, and let cheesecake rest for 1 hour. Then chill in refrigerator for at least 4 hours or overnight.
  6. Before serving, top with whipped cream and sprinkles. Add fruit or chocolate sauce if desired.
