- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- ½ cup plain yogurt or sour cream
- 1 ½ cups peeled and diced apples (Honeycrisp or Granny Smith)
- Optional: ½ cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Cream butter and sugar together until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Mix in yogurt or sour cream until smooth.
- Gently fold dry ingredients into wet until just combined. Fold in diced apples and nuts if using.
- Pour batter into loaf pan, smoothing the top. Bake 50–60 minutes, until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Dust the top with cinnamon sugar for a crunchy crust. Add raisins or dried cranberries for extra sweetness. Drizzle with cream cheese glaze for a dessert-worthy finish. Use whole wheat flour for a heartier loaf.
