  • 2 large eggs, room temperature

  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Cream butter and sugar together until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Mix in yogurt or sour cream until smooth.
  5. Gently fold dry ingredients into wet until just combined. Fold in diced apples and nuts if using.
  6. Pour batter into loaf pan, smoothing the top. Bake 50–60 minutes, until a toothpick inserted in the center comes out clean.
